On May 20, 2021, Health Canada's Food Directorate issued regulation on the approval for the use of the food additive on “Notice of Modification to the List of Permitted Firming Agents to Potassium aluminum sulphate Enable the Use of Potassium Aluminum Sulphate in Salted Jellyfish”. The additive is already permitted for use as a firming agent in unstandardized foods, pickles and relishes, and sea urchin roe.
The main focal points of the scientific document is summarized as follows:
- The assessment support the safety of potassium aluminum sulphate for its requested use in salted jellyfish.
- Evaluation was carried out on both the hydrated and anhydrous form (potassium aluminum sulphate anhydrous).
- The permitted level is set at 11ppm on an “as aluminum” basis for Potassium Aluminum Sulphate.
- Allergenicity, chemistry, microbiology, nutrition, and toxicology support the safety of potassium aluminum sulphate for its requested use.
The regulation is effective from May 20, 2021.
